Low-carb Cereal or Dessert (Recipe)

Keto “Oatmeal”

 2 Servings

  • 1 cup nut milk (Silk Organic Coconut Milk)
  • 3/4 tsp vanilla (or 1 tsp. ground cinnamon; combine cinnamon with dry ingredients)
  • 1 T fat – butter, ghee or coconut oil (Note: refined coconut oil is flavourless)
  • 3/4 cup fine almond flour (Kirkland - Costco)
  • 1/8 tsp salt
  • 1 T Lakanto Monk Fruit Sweetener
  • 1 T Isopure whey protein powder (unflavoured)

Combine dry ingredients in saucepan, add nut milk, fat and vanilla. Heat and stir until thickened (2-3 minutes). Divide into 2 bowls.
