Kielbasa Sausage with Onions, Peppers and Sauerkraut (Recipe)

250g (more is fine) Kielbasa/Kolbasa sausage, sliced; 1/2 onion, sliced; 2 peppers, chunked; ~750ml jar sauerkraut (drained); 1/3 cup sauerkraut juice; 2 bay leaves in the Instant Pot. 10 minutes on high pressure. Add some baby tomatoes after the pressure cooking is finished; sauté the mixture for a few minutes to soften the tomatoes. Add salt and pepper to taste. Wow, really nice!

Tips: Kielbasa is typically a lightly smoked sausage, but use your own favourite sausage and see how you like it, e.g., Polish or German sausages, smokies, bratwurst, etc.

Rinse the sauerkraut if you want to reduce the flavour and sodium content.

Add caraway seeds or ground coriander to the sauerkraut.

Dijon mustard is a nice condiment with this dish.

Serve with stewed apples and/or red potatoes for family members who are not low-carb.
