Crispy Low-carb Breading for Meat, Fish, Tofu and Veggies (Recipe)

This is Indigo Nili's recipe for dairy-free, carnivore breading. It is amazing!

Low-carb Breading that STAYS CRISPY!

Mix together thoroughly:
  • 2 oz. pork rind crumbs (about 3/4 cup)
  • 1 Tbsp. unflavored gelatin (10g) - any brand
  • 1/2 cup egg white powder (40g) - any brand
  • seasoning of your choice (if your pork rinds are salted, go easy on any seasoning that contains added salt)
Dredge meat or seafood in beaten egg, then in breading mixture. Shallow fry or deep fry in lard, tallow or ghee.
 
Also works in an air fryer. Spray or drizzle breaded meat/fish with a little avocado oil before cooking.
 
TIP: Make pork rind crumbs in a blender or food processor, or put pork rinds in a Ziploc bag and crush well with a rolling pin. You can also buy panko-style pork rind crumbs from the Pork King Good company.
 
LEFTOVERS: Breading will stay crispy even when meat/fish is reheated the next day!
