Spicy Peanut Sauce, Marinade or Salad Dressing

This recipe comes from: Spicy Peanut Tofu Lettuce Cups - Ruled Me. I modified it slightly to suit my taste.

Ingredients:

  • 5 T peanut butter (soften in microwave or add a little warm water, if necessary)
  • 2 T liquid aminos or soy sauce (if using liquid aminos, add a pinch or two of salt)
  • 2 tsp toasted/roasted sesame oil (Note: if you are using this as a cooking sauce, use 2 T regular sesame oil)
  • 1 T lime juice (bottled is fine)
  • 1 tsp chili powder
  • a little sweetener of your choice (e.g., Lakanto erythritol/monk fruit sweetener, liquid Splenda Stevia, etc.)
  • splash of rice vinegar (optional)
  • a little avocado oil and/or rice vinegar or Chinese black vinegar to dilute dressing, if necessary

Mix well and use as marinade (or cooking sauce) for medium- or extra-firm tofu or use as a salad dressing (thin with a little oil and/or rice vinegar, if necessary).
