Spanish Omelette or Tortilla (Recipe Link)

Spanish-style omelette/tortilla with 1 small potato (I am on maintenance so I do eat a few more carbs sometimes), ghee, 2 shallots, 3 baby red peppers, 3 eggs, 3 bacon purses, salt and pepper. This meal was quite filling, but low in protein, so I likely will need to top up later on. And... the taste was awesome!
