Beef and Pork Hash with Cheesy Chicken Cauliflower Rice

Beef/pork hash with eggplant, onions and rice (same as yesterday's meal); cheesy chicken cauliflower rice with broccoli (frozen entrée from Walmart). If you are still in weight loss mode, eliminate the rice in the meat hash. [By the way, I never use freshly-cooked rice and I rarely use freshly-cooked potatoes, as my goal is to increase the resistant starch, and keep any insulin response as low as possible, after eating these starchy foods. I also eat them with other food that has a good amount of fat in it to slow digestion and hopefully help blunt the insulin response. You could also add apple cider vinegar in salad dressing or in water as a drink, to help even more.]
