Bleu Cheese Salad Dressing

Bleu Cheese Salad Dressing
Makes about 2 cups.
- 1/2 cup sour cream
- 1/2 cup mayonnaise
- 2/3 cup crumbled bleu cheese (about 4 oz.)
- 2 T fresh (or bottled) lemon juice
- 2 tsp dried basil
- freshly ground black pepper, to taste
In a blender or food processor, combine all ingredients and blend until smooth; or place ingredients in a jar with a tight-fitting lid and shake vigorously until well blended. Cover and refrigerate several hours before using.
I love this on a big Romaine lettuce salad, but you can also add it to mashed cauliflower, or use it as a dip for veggies or leftover cold meat, like pork shoulder or steak.
