Ground Beef and Pork Mixture, Diced Eggplant

Ground beef/pork mixture (on sale at Walmart), onion, ghee, diced eggplants, Konjac noodles, baby tomatoes.

I used my new butane camp stove out on the patio to sauté the meat, onion and eggplants. So, no cooking smells in the apartment! Nice. I also have a really good electric frying pan which I rarely use. I hauled it out and will use that on the patio, too, since I have an electrical outlet right there. Why didn't I think of this before? LOL
