Ground Meat Muffins, Sweet Potato (Recipe)

Ground meat "muffins" (turkey/beef/pork) with shallots, feta cheese, eggs, ground pork rinds, parsley, garlic, Worcestershire Sauce, salt and chili flakes. Served with half a small sweet potato to help blunt the richness of this meat dish. (If you are still in weight loss mode, omit the sweet potato and use a low-carb veggie like cabbage or eggplant. Or serve with a salad.)
My Version of this Recipe
Makes 12 muffins.
- 1 lb. ground turkey
- 1 lb. of ground beef/pork mixture
- 1/4 cup chopped shallots
- 1/2 cup pork rind crumbs (I'm going to try 1/4 cup pork rind crumbs next time)
- 2 large eggs
- 4 oz. feta cheese, crumbled
- 1 T. Worcestershire Sauce
- 1 T. minced garlic (jarred is fine)
- 2 T. minced fresh parsley (more is okay)
- 1 tsp. salt
- 1 tsp. chili flakes (I'm going to try 1.5 tsp. next time)
Preheat oven to 350F. Grease 12-cup muffin tin with coconut oil. Mix all ingredients together well. Mound mixture into all 12 cups. Bake 25 - 55 minutes or until internal temperature is 180F.
Optional: Top muffins with grated cheddar cheese. Add crumbled bacon to the mixture.
Substitutes:
- Use other cheese such as mozarella, cheddar or even cream cheese (up to 8 oz.).
- Use dried minced onions or onion powder instead of fresh onions. Try green onions.
- Use granulated garlic, dried minced garlic or garlic powder instead of fresh or jarred garlic.
