Citrus Salad Dressing (Recipe)

Citrus Salad Dressing
- ¼ cup lemon juice
- 2 large garlic cloves (minced)
- 3-4 T olive oil
- 1 tsp maple syrup (or low-carb sweetener)
- 1 tsp Dijon mustard
- ¼ tsp salt
- ¼ tsp pepper
Combine with hand blender.
Great on kale salad as shown in the photo. Note: The original kale salad recipe had dried cranberries and parmesan cheese, but I prefer to leave out both of those. Instead I use use goat cheese crumbles and a sprinkle of stevia on the greens just to mellow out the citrus in the dressing. Delicious!
