Middle Eastern Ground Beef, Fried Eggplant and Potato, Sour Cream

Middle Eastern ground beef served on a bed of diced, fried Chinese eggplant and potato, topped with sour cream. Delicious!
Note: I am on maintenance, hence the small potato (~27 gm carbs). Also, I don't eat much dairy, but I felt sour cream would round out this dish... and it did!
