Crispy chicken thighs cooked in ghee, pesto konjac “pasta,” baby tomatoes.
Quick late lunch after walking the dogs and shopping. Marinated Asian chicken bites, sautéed with spinach and baby tomatoes, topped with chopped peanuts. Microwaved a package of frozen cheesy broccoli to have on the side.
Not a fan of skinless, boneless chicken breasts, but I needed to use up a couple, so I made air-fried Asian chicken bites. The cottage cheese (4% fat) is yummy with English Toffee Stevia and helps with some extra fat since chicken breasts are so lean.
Another Greek-ish salad with feta cheese. This time accompanied by mild Italian sausages and two medium-boiled eggs (both double yolkers!).
