More of the pork and mushroom stew I made yesterday, but this time with egg white “noodles”! It’s a smaller meal than I usually eat, so likely I’ll need something to top this up today.
Stew made with leftover seasoned pork chops, mushrooms (on sale at Walmart), cooked spinach, baby tomatoes, homemade turkey “gravy.” Paired with Indigo Nili’s egg white crepes. Extremely filling. I have enough stew left in the pan for tomorrow… as well as a crepe, as I could only eat one of these.
Found a seriously discounted salad kit at Walmart today. Added brisket ($5 off at Safeway) that I cooked in the Instant Pot yesterday. Bingo… lunch!
