Air-fried beef meat bars, steamed Brussels sprouts with butter. Easy-peasy, delicious and satisfying.
For a Boxing Day treat I concocted this “dessert.” It was simply two squares of Lindt’s 85% Chocolate and a Diet Pepsi.
Boxing Day: Mussels in garlic butter! Oh my… soooo gooood! Followed by two squares of Lindt’s 85% Chocolate and a Diet Pepsi. I never normally bring Diet Pepsi home, just occasionally have it at Costco or a restaurant, but I bought a few cans just for the holidays! When they’re gone, they’re gone.
Christmas dessert: A bowl of pomegranate seeds (called arils). I love that it takes some effort to remove the arils! About 28 total gms of carbs. Not too bad; it’s Christmas and I’m on maintenance.
I decided to oven roast some mild Italian sausages and veggies (Brussels sprouts, red pepper, red onion, asparagus, radishes, carrot), seasoned with salt and pepper and Bragg’s 24 herbs and spices seasoning. It was delicious! Note: I don’t normally eat carrots, but it’s Christmas… and I am on maintenance.
Christmas Eve salad of Romaine lettuce, red onion, red pepper, tiny tomatoes, green olives, steak, bacon, salsa mayo, salt and pepper.
Steak (garlic powder, salt and pepper), asparagus and butter. OH, YUM! Low-carb meals are soooo booooring! ROFL
Decided to make it really simple today by using leftovers: beef meat bars, bacon, steak, hard-boiled egg. With leftovers like that, how can you go wrong? LOL
