Air fryer boneless pork loin chops, Southwestern/Mexican cauliflower rice, dill pickles. Lotsa flava! And a reminder that I am on maintenance so the bits of beans and corn in the cauliflower rice are not a problem for me.
Instant Pot brisket (so easy!) and leftover oven-roasted veggies. A really simple, but very delicious meal… and a lot prettier in real life!
Oven-roasted vegetables and canned Tulip luncheon meat from Denmark (‘cuz I forgot to take meat out of the freezer). The vegetables were really delicious: radishes, Brussels sprouts, cauliflower, yellow pepper, onion, cherry tomatoes, olive oil, salt and pepper.
Chicken and “rice” soup made with homemade chicken broth, Konjac rice, leftover air-fryer chicken, Romaine lettuce and a few cherry tomatoes. Seasoned, and topped with crispy chicken skin!
Southwestern/Mexican cauliflower rice, air-fryer chicken legs. I’m not a huge chicken fan, but these were really juicy with lovely crispy skin, so I thoroughly enjoyed them! Remember, I am on maintenance, so I wasn’t worried about a few beans and kernels of corn in the cauliflower rice mix.
Asian Sesame Salad Kit and fatty, delicious beef tongue. I only used half the salad dressing from the kit. This was so yummy!
Prawns with seafood sauce (I ate about 2 T sauce). Don’t forget that I’m on maintenance, so I have a little leeway here and there.
Mild Italian sausages, poached eggs with a little butter, Mexican cauliflower rice. There are a few bits of corn and beans from the Southwestern style frozen cauliflower rice, but I’m on maintenance and my weight is very stable, so those few grams of carbs are nothing for me to worry about.
