Coconut shrimp curry with cauliflower/veggie rice. I also added a dollop of goat cheese and a perfect egg (sous vide at 192 F for 20 minutes; plunge into ice bath for 30 minute).
Low carb bread, hard-boiled eggs, mayo, mustard, s&p; bacon; yellow pepper. Okay, this low-carb bread (2 slices=30 gms total carbs) was a bit dry and kind of pasty/sticky after chewing, but that might be due to the fact that it is gluten free. Virtually no taste. I should just toss the rest of the loaf…
Salisbury steaks, onion gravy, puréed cauliflower and a few baby tomatoes. Not as fancy looking as the recipe’s photo, but very delicious. https://www.dietdoctor.com/…/salisbury-steak-with-quick…
Another steak from Costco, but this time cooked via sous vide and a quick sear afterwards. Served with Turmeric Cauliflower Rice (with added red peppers and ginger/garlic/chili paste). This steak was better than yesterday’s, but not as good as I had expected from a Costco steak. But, all in all, a very good meal! https://www.naughtyandnicekitchen.com/turmericrice.html
Just steak! I had no red meat left in my house and I was severely craving it, so I went to Costco with a friend and bought two steaks. This is the larger of the two. Not a particularly tasty steak for some reason; I’ve had great steaks from Costco in the past. Oh well,…
Romaine lettuce salad with red onion, red pepper, avocado, olives, mayo/salsa dressing, left over lamb patty (diced), two boiled eggs.
Romaine lettuce salad with cherry tomatoes, red onion, red pepper, chopped kimchee (rinsed to reduce spiciness) and two cans of mackerel (one plain, one smoked). I also added 1 T. of liquid from the can of plain mackerel. The salad mitigates some of the richness of the mackerel, the same thing that rice would do.…
Cauliflower/veggie rice with left over canned corned mutton and onions cooked in ghee. Also had the other half of my nectarine from the previous day. I rarely eat fruit, of course, but once in a blue moon I do have a little.
I wasn’t very hungry when I got home on this day. Decided to just have a snack plate, which included devilled ham, celery, a hard-boiled egg AND 1/2 a nectarine (8g carbs)… first fruit I’d eaten since Jan. 22, 2021. Later, I felt I was a little low on protein, so I had another egg…
Curried shrimp with cauliflower rice, topped with chicken left over from making chicken stock. I spiced up the chicken with some garlic/ginger/chili paste since it’s kind of tasteless after making stock. Made a pretty good combo!
