Forgot to take meat out to thaw yesterday, so made a three-egg omelette with mushrooms, spinach, bacon and half a parmesan cheese wrap; served with Mexican cauliflower rice. Don’t judge; I’m not a very good omelette maker!
Mackerel fillets cooked in ghee with crispy skin used as garnish (it’s the first thing I ate!); Mexican cauliflower rice with onion, garlic, tomato paste, spices and mixed veggies; spinach with a dab of butter.
Homemade meat sauce served with a chopped salad kit (Bacon & Bleu Cheese). I threw away the croutons and only added half the dressing, then I added a bunch of my own bacon bits to the meager amount the kit came with.

Crispy bacon (air fryer), a hard-boiled egg, Mexican cauliflower rice, mashed Swede/rutabaga with butter, celery with cream cheese, olives. So many wonderful flavours! Really enjoyed this meal.
Seasoned lamb patties (2 gms carbs per patty), mashed Swede/rutabaga with a dab of butter, Mexican cauliflower rice, purple heirloom peppers, baby tomatoes. Really yummy meal. I love lamb and I’m truly enjoying Swede/rutabaga.
Instant Pot chicken curry with coconut milk, chicken broth, canned diced tomatoes, cooked spinach and cauliflower rice. Delicious!
