Philly Cheese Steak (Recipe)

Philly Cheese Steak or maybe Philly "Cheat" Steak is more accurate, since no steak is used in this recipe!
Regular/medium ground beef, ghee, onion, green pepper, Chinese eggplant, soft goat cheese, baby tomatoes (just for the colour), Worcestershire Sauce, s&p. Wow, this was DELICIOUS!

Ingredients
- 1 lb (454g) regular/medium ground beef
- 1/2T ghee
- 1/2 diced onion (shallots or green onions would also work in this dish)
- 1 medium, diced green pepper
- 1 diced Chinese or Japanese eggplant (Indian eggplants would also work) - no need to peel
- 130g soft goat cheese
- 3 diced baby tomatoes (optional)
- 1-2T Worcestershire sauce (to taste)
- salt & pepper to taste
Instructions
- Sauté ground beef in 1/2 T ghee or other fat. When no longer pink, remove beef with a slotted spoon. Do not drain the fat.
- Add all diced vegetables to the same pan. The eggplant will deliciously absorb the meat fat. Sauté for a few minutes until partially softened, then cover and steam for 5 or so minutes until veggies are well softened.
- Add back the ground beef.
- Add Worcestershire sauce, salt and pepper to taste. Stir.
- Add goat cheese and stir well until everything is hot and fully combined.
- Top with tomatoes (optional).
Makes 2-4 servings, depending on whether you're on a low-carb diet or not.
Note: For non-low-carb family members serve on crusty, buttered buns or rice.
Tips: If you don't like goat cheese, use cream cheese instead. Garlic would be great in this dish.
