Pork Loin Roast, Parsnips, Tomatoes

Centre cut pork loin roast (Instant Pot), sautéed baby tomatoes, boiled parsnips, homemade gravy.
 
I am experimenting with parsnips as they don't bother my gut like the lower carb brassicas do (broccoli, cauliflower, Brussels sprouts, etc.). You'll notice that I only have ~100 gm of parsnips on my plate (~18 gm total carbs). The tomatoes account for more carbs, of course, but I'm on maintenance, so I can handle a few more carbs.
 
Any food can be low carb; it's quantity that counts, as well as the addictive quality of the food. Luckily, I am not addicted to parsnips!
