Pork Meatballs, Eggs, Eggplant Salad, Romaine Salad

Four air-fried Asian Pork Meatballs, three Chinese scrambled eggs, Asian cold eggplant salad, Romaine lettuce salad with peanut dressing. So much flavour!
Asian Salad Dressing or Cooking Sauce
1-1/2 Tbsp sesame oil (regular sesame oil, NOT toasted/roasted sesame oil; or use a mixture of avocado oil and a teaspoon of toasted/roasted sesame oil)
1-2 tsp chili oil (or to taste; I think I only used 1/2 tsp)
2 Tbsp finely chopped garlic (I used ~1 Tbsp jarred garlic)
1-1/2 Tbsp finely chopped fresh ginger (I used ~1/2 Tbsp jarred ginger)
3 Tbsp finely chopped spring onions (scallions)
2 Tbsp light soy sauce
1 Tbsp sugar (I used 3 squirts Splenda Stevia)
1 Tbsp Chinese black vinegar (rice vinegar would be okay, too)
Combine all ingredients.
Notes: Adjust ingredients to your taste. Sweetener makes the Asian flavour more authentic, so I don't recommend leaving it out. This is great on eggplant, but I think it would also work on tofu. It also works as a cooking sauce for eggplant hash and probably for chicken, too.
