Romaine Salad with Tangy, Seasoned Tofu

Romaine lettuce salad with red pepper, baby tomatoes, red onion, olives and tofu (pickled then marinated in olive oil, lemon juice, lemon zest, liquid from olives, oregano and thyme).

Tofu is something I can digest with no problem, unlike most grains, legumes. etc. However, it's not super high in protein. This salad contains 350gm of tofu with 56gm of protein. I strive to get 100gm of protein every day, so I did top up my protein afterwards with some meat.
