Salami and Butter Lettuce Salad Recipe

Note: The photo was taken before I added the dressing and tossed the salad.
 
Pepper Mixture:
  • about 5 baby bell peppers or 2 regular peppers (cut into 1 - 1.5 inch pieces)
  • 1/2 jalapeno pepper (seeds removed and diced) - optional
  • 2 crushed garlic cloves
  • 1/2 tsp dried thyme

Other Ingredients:

  • 1 T olive oil
  • 100 gms diced or julienned salami
  • butter lettuce
  • fresh basil

Dressing. Mix well:

  • 2 T olive oil
  • 1 T lemon juice
  • 1/4 tsp black pepper
  • 2 crushed garlic cloves

Directions:

Saute pepper mixture in olive oil for two minutes, then cover and cook for five minutes on low until just tender (do not overcook). Add salami and saute briefly with pepper mixture.

Serve mixture over torn butter lettuce and 2-3 T sliced fresh basil. Add dressing and toss.
