Sausage and Roasted Veggies Sheet Pan Recipe

Ingredients
- 1/2 large onion or 1 medium onion, cut into 1/2-inch wedges
- 2 bell peppers, yellow, orange, red or a combination (seeds and ribs removed), cut into 1/2-inch strips
- 1 poblano pepper (seeds and ribs removed), cut into 1/4-inch strips OR 1 tsp Aleppo chili flakes
- 3 medium cloves of garlic, minced OR equivalent jarred minced garlic
- 1 teaspoon dried oregano (use less if using ground oregano)
- 1/2 teaspoon salt
- 1/2 teaspoon freshly ground black pepper
- 3 tablespoons olive oil, divided
- 1 pound sausage links of your choice (e.g., mild Italian sausages, English banger sausages, kielbasa, bratwurst, etc.)
- 1 cup grape tomatoes
- 2-3 T red wine vinegar
- Chopped or julienned fresh basil to garnish (optional)
Instructions
Preheat oven to 400°F (200°C).
Spread onions, peppers, and garlic across a sheet pan. Sprinkle with oregano, salt, pepper (and chili fllakes, if using), then toss with 2 tablespoons olive oil.
On another sheet pan or shallow roasting pan, add the sausage links. Drizzle with 1 tablespoon olive oil. Roast for 20 minutes.
OR cook sausages in air fryer for 15 minutes at 380°F (190°C).
Slice the sausages into 1/2 to 1 inch pieces.
Next, mix together the vegetables, sliced sausages, tomatoes and red wine vinegar. Place back in the oven. Roast 25-30 minutes, stirring the mixture once or twice.
Garnish with basil (optional).

Note: If you are still in weightloss mode, increase the amount of sausages, or decrease the amount of vegetables to achieve your daily carbohydrate goal.
