Sausage Meat Stew with Onions, Chilies and Tomatoes (Recipe)

Mild Italian sausage meat stew with onions, green chilies, baby tomatoes, homemade chicken stock and coconut cream. Delicious!

Here is my version:

Ingredients

  • 375g ground pork, beef or lamb (ground turkey would probably work, too)
  • 375g Johnsonville Mild Italian Sausage Meat (or equivalent)
  • 60g fresh mild green chilies, seeds removed, sliced OR red/orange/yellow bell pepper, diced
  • 125g sweet, yellow, or white onion (use less if you are in weightloss mode)
  • 1 cup homemade chicken stock
  • 1 minced garlic clove OR 1 tsp jarred minced garlic
  • 150g cherry/baby tomatoes, halved OR 1/2 cup crushed tomatoes OR 1/2 cup puréed canned pumpkin 
  • 160ml can coconut cream (NOT coconut milk) OR 1/2 cup heavy whipping cream
  • 1/4 tsp ground sage
  • 1/2 tsp thyme
  • 1/2 tsp Aleppo chili flakes (optional)

Instructions

Sauté meat, onions and chilies (or peppers) for at least 15 minutes to increase flavour in meat and veggies. Stir often and break up meat, but leave it chunky, not grainy.

Add tomatoes (or pumpkin purée), garlic, sage, thyme and chili flakes (if using). Stir well and cook briefly.

Add chicken stock and coconut cream. Simmer for about 20 minutes, stirring every few minutes, until thickened.

Optional: Add 1T butter at the end of cooking.

Tip: Add a package of frozen cauliflower rice to stretch this meal. To stretch this meal for non-low-carb family members, serve with rice.

Makes 3-4 servings. Probably 4-5 servings if cauliflower rice is added or stew is served over regular rice.
