Scallop and Egg Curry

After making some curried shrimp to put in the freezer, I had a lot of sauce left over, so I made some scallop and hard-boiled egg curry for lunch. Bottled green curry sauce, coconut milk, frozen cauliflower and veggie rice, small scallops, hard-boiled eggs. Yummy!

Note: Jarred curry sauces typically contain canola/soybean oil, so I'm not happy with tha. One day, maybe some company will make a better option, but right now I'm willing to compromise for the convenience.
