Steamed Egg Custard – Instant Pot Recipe

The secret to steamed egg custard is equal amounts (liquid measure) of eggs and water.

Put 1 cup water in Instant Pot. Combine eggs and an equal amount of water in a heat-proof bowl or measuring cup, blend well. Place bowl in Instant Pot. You can cover the bowl, if you wish, but not necessary. Cook on high pressure for 7 minutes. Natural Release for 20 minutes.

The custard should be smooth and creamy. If mixture splits or curdles, reduce the cooking time in the future. But, apparently, you can rescue split or curdled custard by plunging the pan or bowl into cold water and whisking the mixture vigorously.

Unsweetened Version: Eat plain or top with a little sesame oil, soy sauce, green onion.

Sweetened Version: Add your favourite sweetener and a few berries and/or slivered nuts. A splash of full-fat cream is also nice.
