Zucchini Egg Fritters

I made zucchini fritters! I was going to have them with my meal, but I forgot that the zucchini noodles had to be salted and then sit and weep for 30 minutes before you wring the water out of them, so the timing didn't work out.

Anyway, I did try one and it was delicious, but mine were not crispy at all. I will do some research and see if I can improve them. They weren't wet (I used a nutmilk bag to wring the life out of them), so that's not the issue, maybe my non-stick griddle doesn't get hot enough even tho' I set it for 425F. Might need a pan with quite a bit of fat in it to really crisp them up.
